Rubble soup: a real meal

It may not have the most attractive and friendly name, but it doesn’t lack flavor. Learn how to prepare a traditional rubble soup.

The Portuguese are very fond of soups, which are excellent allies of a healthy diet and, as a rule, result from very economical recipes. And when it comes to cooking a soup that is rich in nutrients and has a lot of filling capacity, one of the most traditional soups is precisely the rubble soup🇧🇷

Typical of the western region, rubble soup has butter beans, pumpkin, potatoes, savoy cabbage, vinegar, cloves, onion, ham or salt pork bone. There are those who add rice or pasta to it.

Ingredients

  • 200g of beef
  • 100gr of ham
  • 1 onion
  • 2 carrots
  • 400g savoy cabbage
  • 1.2l of water
  • 1 turnip
  • 2 potatoes
  • 100g cooked butter beans
  • salt qb
  • mint qb

preparation method

  • Cut the meat and ham into cubes and place in a pan.
  • Cut the onion, carrots and cabbage into pieces and add everything to the meat.
  • Pour the water, season with salt and mint and cook for 30 minutes.
  • Meanwhile, cut the turnip and potatoes into cubes and add to the soup when the 30 minutes are up.
  • Also add the beans and cook for another ten minutes.
  • Rectify the seasonings and serve.

Ingredients

  • 1 small can of red beans
  • 1/2 small savoy cabbage
  • 2 carrots
  • 2 turnips
  • 1 tomato
  • 1 onion
  • 3 cloves of garlic
  • 50gr of ring dough
  • 1 dl of olive oil
  • 1 beef bouillon cube
  • 1 sprig of mint
  • salt and pepper qb

preparation method

  • Peel and wash the onion and garlic cloves and chop finely.
  • Peel the tomato, discard the seeds and cut into cubes.
  • Heat a pan with oil and let it heat up.
  • Then add the onion and garlic and let it cook, stirring occasionally, until the onion turns golden brown.
  • Then add the meat broth, the tomato cubes and 2 liters of water and bring to a boil.
  • Peel and wash the carrots and turnips, cut into cubes and add to the pan.
  • Arrange the savoy cabbage, discarding the hardest part.
  • Cut into small pieces and also add to the pan.
  • Add the mint sprig and simmer for 30 minutes or until the vegetables are soft.
  • Then add the pasta and let it cook a little longer, stirring occasionally, until it is cooked.
  • Add the beans, rectify the seasoning and add more water if necessary.
  • Bring to a boil again and serve hot.
