Recipe for Ris à la Malta – this is how you make Leif Mannerström’s best Christmas dessert

Maltese rice

You need: (8 servings)

Step 1:
1 1⁄2 dl porridge rice
1l standard milk
1 cinnamon stick
1 1⁄2 dl caster sugar
1 pinch of salt
1 vanilla pod, scraped out
50 g unsalted butter

Step 2:
6 dl whipping cream
1⁄2 dl diluted orange juice
grated peel of 1 orange
1 tsp vanilla sugar
1 tablespoon icing sugar

For garnish:
orange slices walnuts cinnamon

For serving:
fruit sauce
candied nuts and fruits

Do this:

Pour the milk into a thick-bottomed saucepan. Add the rest of the ingredients in step 1 except the butter and cook on low heat, covered, for about 30 minutes.
Stir every now and then. Stir in the butter and cover with plastic wrap. Let cool. Add orange juice, orange peel, vanilla sugar and icing sugar to the rice. Whip the cream lightly and fold it down.
