Recipe for chocolate and orange fudge – here is Leif Mannerström’s delicious Christmas treat

Chocolate and orange fudge

About 40 pcs
Ingredients:
1 can condensed milk (395 g)
400 g dark chocolate
125 g room temperature butter
1 pinch of salt
finely grated peel of 1 orange

For garnish:
200 g dark chocolate (70%)
Pickled Orange Peel:
1 orange
1 dl caster sugar
1 dl water

Do this:
Plastic a mold of approx. 30x20cm. Bring the condensed milk to a boil in a saucepan over low heat while stirring. Break the chocolate into pieces and stir it in. Add butter, salt and orange peel. Stir to a smooth, smooth batter. Pour into the mold and let set in the fridge for at least 4 hours. Wash the orange and cut strips with a potato peeler. Shred the peel thinly. Boil water in a saucepan and boil the peels for 30 seconds. Strain off the water and repeat the procedure two more times. This is done to remove the bitter flavors from the skins. Boil sugar and water in a saucepan. Put in the shells and cook for a couple of minutes. Leave to cool in the bowl. Cut the fudge into pieces and leave at room temperature for at least 30 minutes. Break the chocolate for the garnish into pieces and melt in a bowl over a water bath. Dip the fudge into the chocolate using a fork. Scrape off some of the chocolate on the underside of the chocolate pieces and place them on a piece of parchment paper.

Decorate with pickled orange peel. Allow to set and store cool. The fudge can be flavored in many different ways, e.g. with gingerbread spices, a little cognac or salted pistachios.
