Our recipe is made without butter and without eggs, just flour, soymilk sugar and vanilla yeast. In this way, in addition to being lighter, these pancakes are also suitable for people who are allergic or intolerant to lactose or egg white.

Ingredients
- 150g of flour
- 50g brown sugar
- 1 teaspoon vanilla yeast
- 200 ml of soy milk
- 2 tablespoons of corn oil
- Zest of one lemon or orange
- salt
Step 1: Mix the brown sugar, flour, vanilla baking powder and a pinch of salt in a bowl. Mix all the ingredients well and add the lemon zest.

Step 2: Add the soy milk and the oil, stirring with a whisk, until a homogeneous mixture is obtained. Heat a non-stick frying pan and grease it with a little oil. Pour in a ladleful of batter and allow to cook for a few minutes before carefully flipping.

Step 3: With this dough you can get about 8 pancakes.
