Eat more beans – here are the tips and recipes you need

Chocolate mousse cake with chilli, almonds and honey and black beans

Bottom: 45g almonds
3 soft, fresh dates, pitted
1 tablespoon of cocoa
1 teaspoon unflavored coconut oil
a pinch of salt

Filling: 70g cooked, well rinsed and drained black beans
2 soft, fresh dates, pitted
1 tablespoon honey
2 tbsp milk
1 teaspoon unflavored coconut oil
1 tablespoon almond butter
30g chocolate 70% with chilli

Do this:

Fasten a piece of baking paper to the bottom of a springform pan.
Start with the bottom: first mix the nuts into a coarse flour/minced almond.
Add the rest of the ingredients and mix again.
Press into the springform pan and place in the freezer while you make the filling.
Rinse the beans thoroughly, preferably several times.
Allow to drain.

Then mix the beans with dates and honey.
Heat the milk gently in a small saucepan.
Break the chocolate into smaller pieces and stir into the milk.
When the chocolate starts to melt, remove the pan from the heat and add the coconut oil and almond butter.
Continue stirring until you have a smooth chocolate batter.

Pour the chocolate batter over the bean mixture and mix again, until you have a smooth and smooth filling.
Pour the filling over the bottom and place in the freezer again to set, at least 2-3 hours but it will keep well in the freezer for several weeks.

Take out about 30 minutes before serving and decorate however you like, I used chopped almonds, grated chocolate and chilli flakes.
