Crispy waffles with sweet avocado and pistachio cream
For the avocado pistachio cream:
1.5 dl soaked shelled pistachios / 1 avocado / 1 tbsp mesquite, can be omitted but gives a heavenly taste / 1 tsp real organic vanilla powder / 1 tsp agave syrup, agave syrup works at least as well / 1 tbsp lemon juice
Do this:
Peel the nuts and soak them in cold water for about 20 minutes. Then pour off the water and mix the nuts with the remaining ingredients in a bowl, mix with a hand mixer until you have a smooth batter. Taste with more sweetness as desired.
For 2 waffles:
2 eggs / 1 egg white / 2 tbsp coconut flour / 2 tbsp protein powder, can be omitted and replaced with more flour / 1 tbsp almond milk, other milk works well / about 1 1/2 tsp coconut oil for frying
Do this:
Mix all the dry ingredients and then whisk in the eggs and milk. Mix well. Fry in a waffle iron greased with coconut oil and serve with the avocado-pistachio cream.
