  • 300gr of shredded cod
  • 150ml of beer
  • 6 cloves of garlic
  • 3 eggs
  • 1 lemon
  • 1 bunch of coriander
  • ½ onion
  • 2 and ½ cups of water
  • 1 cup self-rising wheat flour
  • 1 cup carolin rice
  • salt and pepper q.s.
  • Oil, parsley and olive oil, to taste

preparation mode

  • Start by cooking the rice, cutting the garlic cloves into slices and frying in a pan with oil.
  • Add the chopped coriander stalks and reserve the leaves.
  • Add the rice, without washing, and let it fry slightly.
  • Add the water, season with salt and stir.
  • When it is almost cooked, add the remaining chopped coriander, cover and let it rest off the heat.
  • Meanwhile, add the ½ grated onion to the already soaked and shredded cod, as well as a handful of chopped parsley.
  • Separate the yolks from the whites of 3 eggs and add the yolks to the cod.
  • Add 100 to 200 ml of beer and mix everything.
  • Add the yeasted wheat flour, salt, pepper and mix again.
  • Beat the egg whites until stiff and fold them into the dough. Leave it aside to rest for a while, until the oil heats up.
  • When the oil reaches 180ºC, add a few spoonfuls of dough to the skillet and let it fry on both sides.
  • As they are ready, place the fritters on absorbent paper.
