Cooked Christmas ham
Ingredients:
1 rimmed ham with the rind left
1 yellow onion
1 small sprig of thyme
3 bay leaves
10 cloves
15 allspice grains
Grilling:
2 tbsp Swedish mustard
2 tablespoons coarse mustard
1 egg yolk
Do this:
Leave the Christmas ham in cold water in a bowl for 2 hours. Make a cut through half the onion, put the thyme and bay leaves in the cut. Press cloves and allspice around the onion.
Pick up the ham and insert a roasting thermometer so that the tip ends up in the center of the ham. Put it in a spacious saucepan together with the onion.
Cover with cold water and bring to a boil. Boil the ham together with the chives. Skim the ham spade regularly. The ham is fully cooked at 75°. Lift the ham and let it cool. Also save the shovel and let it cool. Set the oven to 225°. Put the ham in an oven-safe form. Mix the mustard varieties with the egg yolk and spread the top rind on the ham. Grill in the middle of the oven for about 10–15 minutes, until it has a nice color. Let cool.
