Christmas trunk: so much flavor at the table

If there’s something that marks every Christmas, it’s the sweets we put on the table. See two recipes to prepare the famous Christmas log.

The tradition of tasty Christmas log helps to understand its importance in the Christmas season. A very hard trunk of wood should be chosen, to be cut, decorated and placed at the door of the church.

Before the Missa do Galo, the log was set on fire and after the mass, everyone gathered around the bonfire, talking animatedly and celebrating the moment. Afterwards, each family would take home a log, as that fire was considered sacred.

Currently, there are still some villages that carry out the tradition, but more often socializing takes place around a stuffed table, where there is no shortage of an edible Christmas log.

Ingredients

  • 100gr of flour
  • 100gr of sugar
  • 5 eggs
  • 2 tablespoons ground almond
  • margarine for greasing
  • sugar for sprinkling
  • Ingredients for the filling:
  • 200gr of sugar
  • 5 gems
  • 1dl of milk
  • 1 tablespoon of corn starch
  • 1dl of water
  • Ingredients for the topping:
  • 200gr of chocolate
  • 150g of softened butter
  • 2dl of cream

preparation method

  • Heat a pan with sugar and water for 10 minutes and remove from heat.
  • Dissolve the cornstarch in the milk, add to the sugar pan, also add the egg yolks, stir and bring back to the heat, stirring constantly until it boils.
  • Remove from heat and let cool.
  • Bring the cream to the boil, bring to a boil, remove from the heat, add the chocolate in pieces, let it rest for 10 minutes, stir well until you get a smooth cream and let it cool.
  • Beat the butter until it doubles in volume and add to the chocolate mixture in a thin stream, beating constantly until smooth. Reserve.
  • Turn on the oven at 180 degrees.
  • Line the oven tray with parchment paper and spread with margarine.
  • Separate the yolks from the whites, beat the whites until stiff and add the sugar little by little, beating constantly until they are firm.
  • Add the egg yolks, beat for another 5 minutes, add the sifted flour and almonds and mix everything gently.
  • Place on a lined tray, smooth and bake for 12 minutes.
  • Remove from the oven, unmold onto a cloth sprinkled with sugar and let cool.
  • Discard the paper, spread the stuffing mixture over it, roll it up with a cloth and let it rest for 30 minutes.
  • Remove the cloth, cut off one end of the roll, place it on top, hold it with toothpicks and spread the whole trunk with the chocolate mixture.
  • Decorate to taste.

  • 150gr white sugar
  • 5 eggs
  • 2 eggs only the yolks
  • Port wine or rum
  • 125gr self-rising wheat flour
  • 50gr butter
  • Ingredients for the cream:
  • 250gr butter
  • 150gr white sugar
  • 2 yolks
  • 1 egg white
  • 1 tablespoon soluble coffee
  • 125gr culinary chocolate bar

preparation method

  • Mix the whole eggs with the yolks and sugar and beat until you get a fluffy, whitish cream.
  • Then alternately add, without beating, the sifted flour and the cold melted butter.
  • Place the preparation on a tray lined with parchment paper and greased with margarine and bake in a medium oven.
  • To make the cream: mix the butter and sugar very well and add the egg yolks and the white (beating well).
  • Add the coffee dissolved in a little water and beat vigorously until the cream is homogeneous again.
  • Finally, add the melted chocolate in a water bath.
  • Unmold the cake onto a sugar-dusted napkin, trim the ends of the dough, sprinkle with a little rum or port wine and roll it up.
  • Once cold, unroll and spread the cake with a little bit of the chocolate cream and roll it up again using a napkin.
  • Cut the ends of the roll diagonally and, with a little cream, connect these ends to the roll, in order to imitate the knots in the wood.
  • Cover the entire cake with the remaining cream.
