Cod with Corn Bread And Spinach

Ingredients
- 4 garlic cloves
- 2 slices of desalted codfish
- 2 bay leaves
- 1 bunch of spinach
- 1/2 corn bread
- 1 onion
- 3dl of cream
- 1dl of olive oil
- 2 c. melted butter soup
- Salt and pepper, qb
method of preparation
- Bring a pot of water and bay leaves to the boil.
- When it starts to boil, add the cod and let it boil for 5 minutes.
- Remove and let cool in the broth.
- Clear of skins and pimples and chipping.
- Peel and chop the onion and garlic and crumble the bread.
- Wash the spinach, blanch for 2 minutes, drain and reserve.
- Heat a pan with olive oil and sauté the onion and 2 cloves of garlic.
- Add the codfish and spinach and mix.
- Add half of the bread and drizzle with the cream.
- Season with salt and pepper and place on a tray that can go in the oven and at the table.
- Mix the remaining bread with the remaining garlic cloves and butter.
- Spread over the cod preparation and place in the oven, preheated to 190ºC, for 25 minutes.
Codfish with cornbread and mashed potatoes

Ingredients
- cod steaks
- Onion
- Garlic
- cornbread
- Parsley
- Oil
- 2.5dl of milk
- 1/2 small lemon
- 1/2 Red pepper
- pepper, qb
- Baking Potatoes
method of preparation
- Mix the milk with the lemon juice and season with pepper.
- Place the cod in this mixture for 1 hour.
- Put the potatoes with the peel, washed, to bake in salted water for 15 minutes.
- Bring the cod-milk mixture to a boil.
- On a baking tray, place a good layer of onion cut into half moons, the pepper cut into strips and sprinkle abundantly with olive oil.
- Arrange the cod pieces on top and drizzle with a little olive oil again. Place in the oven for 15 to 20 minutes.
- Break the cornbread into migas, finely chop the parsley and minced garlic and mix with the breadcrumbs.
- Remove a little olive oil from the cod and add it to the bread crumbs. Engage very well, so as to have the texture of a paste and reserve.
- Check if the potatoes are already cooked, remove and give a small punch.
- Check that the onion is already soft and remove the tray from the oven.
- Spread the breadcrumb mixture over the cod and potatoes, basting them with the oil on the tray.
- Take a few more minutes to the oven and serve warm.
