It is thought that the sponge cake it appeared as a convent sweet in Ovar and that its confection predates the 18th century. We are, therefore, facing a cake full of history and which is one of the most appreciated by the Portuguese people, especially in festive seasons, such as Christmas, New Year’s Eve and Easter.
In France this type of cake is called “genoise”, in Italy “pan di Spagna” and in the United Kingdom “sponge cake”.

Ingredients
- 7 eggs
- 250gr of sugar
- 150gr of flour
- Lemon or orange zest
preparation method
- Turn on the oven.
- In a bowl, separate the eggs.
- Beat the egg whites until stiff and reserve.
- Beat the yolks with the sugar until you get a whitish cream.
- Alternately add the flour and egg whites.
- At the end, the lemon or orange zest.
- Bar and sprinkle a form with vegetable paper and pour the dough.
- Bake at 180º for about 25 minutes.
Ovar sponge cake

Ingredients
- 11 gems
- 2 whole eggs
- 1 pinch of fine salt
- 200gr sugar
- 80gr wheat flour with yeast
- 1 teaspoon baking powder
- Margarine for greasing qb
preparation method
- With the mixer at maximum speed, beat the egg yolks with the eggs, salt and sugar for 15 minutes.
- Place the flour and baking powder and mix carefully with a salazar – do not use the mixer.
- Grease a round shape without a hole with margarine and place parchment paper.
- Grease the parchment paper.
- Pour the dough into the mold and bake in a preheated oven at 180º for 35 minutes.
- To check if it is ready, stick a toothpick in the dough next to the edge of the mold, it must come out dry. If you stick it in the middle, it will have to come out damp to get the soft egg cream.
- Remove from the oven and let cool inside the mold.
- It should only unmold after cold.
chocolate sponge cake

Ingredients
- 6 egg yolks
- 6 whipped egg whites
- 5 tablespoons of sugar
- 5 tablespoons of cocoa powder
- 10 tablespoons of wheat flour
- 1 large glass of water
- 1 tablespoon powdered yeast
preparation method
- Beat the egg whites until stiff and reserve.
- Add the yolks with the sugar and chocolate powder, beat until the mixture is very homogeneous.
- Add to this cream the wheat flour, the water and beat at low speed to mix, then increase the speed until obtaining a very smooth dough.
- Add the baking powder, mixing well, and, lastly, the whipped egg whites, without beating.
- Grease the mold with butter and flour.
- Finally, bake in a preheated oven at 180º for about 30 minutes.
