Chicken and Cheddar Cheese Quesadillas

Ingredients

  • 200g chicken breast cut into cubes
  • 1 chopped onion
  • 1 clove of garlic
  • Chopped parsley and chives
  • 1 c. spicy paprika tea
  • 1 c. tomato sauce soup
  • olive oil and salt qb
  • 4 tortillas
  • 150g grated cheddar cheese

preparation method

  • In a pan, heat a little oil and brown the onion and garlic.
  • Add the chicken and season with salt, paprika and pepper.
  • When the chicken is golden, add the tomato sauce and let it cook.
  • When the chicken is cooked, turn off the heat and set aside.
  • In a frying pan, put a thread of olive oil and a tortilla.
  • On top, spread the chicken and put the cheddar cheese on top.
  • Place another tortilla and when the lower disk is golden, turn it over with the help of a spatula.
  • Repeat the process until you run out of filling or tortillas.
  • Serve in slices and warm.

  • 1 wholemeal tortilla
  • 4 slices of wholegrain cheese
  • 3 slices of tomato
  • 2 c. grated courgette soup
  • 2 c. grated carrot soup
  • 3 lettuce leaves
  • 6 arugula leaves
  • 6 black olives
  • Salt and pepper to taste

preparation method

  • In a very hot frying pan, place the tortilla, cheese, tomato, black olive, courgette and carrot.
  • Season with salt and pepper.
  • Let the tortilla brown and remove from the skillet.
  • Add the torn lettuce leaves and arugula.
  • Close the quesadilla into a half moon shape, cut in half and serve hot.
